For the opening of “Service à la Francaise” in Mauritius and its diffusion in the Indian Ocean, ‘Service à la Française’ will launch exceptional master classes involving its Vice-President Pascal MOLINES, ‘Meilleur Ouvrier de France’ (pastry-confectioner) in three hotels from the SUN Group. The master classes will revisit traditional French pastry recipes with the team in the kitchen to be served "à l'assiette" during an evening meal. “Service à la Française” and the 240 crafts of ‘Meilleurs Ouvriers de France’ intervene through high level training in immersion in the most prestigious institutions around the world. The international platform located in Mauritius will firstly be beneficial to the island and the region.
World Pastry Champion 1999, then at the Grail des Métiers de Bouche "Meilleur Ouvrier de France pastry-confectioner" in 2000. Resulting from this richness and this professional expertise, Pascal Molines wishes to transmit his knowledge and becomes Head Professor at the Paul Bocuse Institute in Lyon, but also ambassador of French Gastronomy around the world (Asian continent, South America and Europe), and this alongside the biggest names in French gastronomy and starred «Roger VERGER, JC . ANSANAY, Guy LASSAUSAIE, Joseph VIOLAT ". Pascal worked for more than 15 years in the Organizing Committee of the World Pastry Cup and took the responsibility from 2009 to 2016 as President.
