    The Divine Starter—Heart of Palm Salad

     This delightful local dish, which is loved by locals as well as travellers, is expertly prepared at Filibusters using the finest, freshest ingredients from the best suppliers on the island. Simple yet satisfying, this interesting local dish is carefully created on Ile aux Cerfs using palm “hearts” (a part of the palm that is literally located at its very core), orange slices, slices of green pepper and the absolutely delicious smoked Marlin which is one of the most sensational local offerings. Beautifully prepared and presented, this crunchy salad is the perfect starter to whet the appetite and provides guests with a fresh, light salad that has a unique taste and texture—it’s certainly a dish that would be hard to find made in exactly in this way elsewhere. 
     
    Also often referred to as “Millionaire’s Salad” because of it’s rare central ingredient and the cost associated with it, each Heart of Palm Salad calls for the use of one palm “heart”. In other words, this means that an entire palm is cut down for each salad.
