Mauritian Recipes to Try at Home

Mauritian cuisine is a testament to the diverse ethnicity of its people and its rich history, with dishes with flavours from India, Britain, France, Africa and China. The host of Mauritian dishes available are all as tempting as the next: from Chinese-inspired dim sum, Indian curries and fresh seafood to palm heart salad, wild boar and bryani—there’s no doubt that Mauritius is a food lover's paradise.
Fragrant spices (traditionally blended to create the base of the exceptional Indian curries), fresh produce (incredible fruit and vegetables are abundant the island over), and core Mauritian ingredients (onions, garlic, chilli, tomatoes and fresh herbs) marry to create bold, delicious flavours that are bound to satisfy even the most discerning of palates. If you would like a taste of paradise, then here are some of the top Mauritian recipes to try at home:
Dhal Puri
If you ask a local which dish you absolutely have to try while you are holidaying in Mauritius, the answer would probably be dhal puri. The quintessential Mauritian street food, this ‘yellow split pea wrap’ or flatbread, originated in Bihar, India. The dough is prepared, then rolled out thinly, fried and filled with an assortment of fillings which can range from chutneys and pickled vegetables to bean curries, ‘Rougaille Mauricien’ (a typical Mauritian spicy tomato sauce) or even made into a ‘dessert’ variation where the dhal puri is used to eat heavenly mouthfuls of kheer (a type of creamy rice pudding served with almonds, sultanas, cardamom seeds and pistachios). Dhal Puri is usually served in pairs and is sure to be a crowd pleaser.
Dhal Puri Recipe: Serves 8

- 2 cups yellow split peas (that have been soaked in water overnight)
- 1 teaspoon cumin (seeds)
- 2kg plain flour
- 1 teaspoon turmeric powder
- 800ml of water
- Salt to taste
- Vegetable oil for cooking

Step 1: Toast the cumin seeds in a hot pan (without oil).
Step 2: Once they are lightly toasted, put them in a mortar and crush with a pestle.
Step 3: Drain the peas and rinse them well.
Step 4: Simmer them in enough water to cover the peas, with cumin, turmeric and salt until they have softened slightly (be careful not to overcook them).
Step 5: Strain the ingredients, in a food processor mix into a coarse paste. Set aside.
Step 6: Mix the flour with 2 pinches of salt in a bowl. Add water gradually to make a smooth dough.
Step 7: Cover the dough with a damp cloth and let it rest for approximately 30 minutes.
Step 8: Roll dough into small balls (about the size of a golf ball) and make a small hollow in each. Place a tablespoon of the yellow pea mixture into the hollow and seal the dough.
Step 9: Roll the balls into very thin ‘pancakes’ (make sure this is on a floured surface or the dough will stick).
Step 10: Brush a non-stick frying pan with a thin layer of oil and cook each dhal puri for approximately two minutes on each side, on high heat. Before you flip your dhal puri, brush a little more oil directly on the dhal puri.
Step 11: Serve two dhal puri per portion with your choice of chutney and curry.
Mauritian Chicken and Prawn Curry Recipe
As already mentioned, curries are an integral part of Mauritian cuisine. Mauritian curries are somewhat different to the original Indian versions which tend to have slightly different flavour combinations and tend to be much hotter (although there is spicy chilli paste that is served on the side of most Mauritian dishes). This Mauritian recipe brings together a delightful list of ingredients that blend to create a local dish filled with subtle but delicious flavours. This dish is commonly served with Farata (a local bread), papadums or plain rice and accompanied by sambals or chutney, depending on your preference.
Mauritian Chicken and Prawn Curry Recipe: Serves 8

- 1kg chicken thighs
- 500g peeled and deveined shrimp
- 2  tablespoon turmeric
- 2 teaspoons coriander powder
- 1 teaspoon chilli powder
- ½ teaspoon cinnamon (powder)
- 1 teaspoon crushed ginger or ginger paste
- 1 teaspoon crushed garlic or garlic paste.
- 2 onions, sliced
- 4 tomatoes, chopped
- Fresh curry leaves (a handful or so)
- Some fresh coriander to garnish

Step 1: Make a curry paste with the dry ingredients and a few drops of water.
Step2: Once they are well combined, mix in the ginger and garlic.
Step 3: Heat some a tablespoon of oil in a pan on a medium setting.
Step 4: Cut the chicken into 3cm pieces and season lightly with salt and pepper.
Step 5: Add the shrimp and chicken to the heated oil in the pan and fry until the chicken is golden brown. Remove from the heat.
Step 6: In a separate pan, heat a few tablespoons of vegetable oil at a moderate setting and fry the onion until it’s soft and clear. Add the curry paste and fry for a few minutes.
Step 7: Add the tomatoes, some salt and the fresh curry leaves. Mix together.
Step 8: Let the sauce cook until it thickens.
Step 9: Finally, add the chicken, prawns and half a cup of water. Combine and cook until the chicken is tender.
Step 10: Remove from heat and serve topped with chopped coriander.
Mauritian Fried Noodles
You might find it strange to find such a typically Chinese dish on a list of Mauritian recipes, but again it goes back to the mix of ethnicities that reside in Mauritius, largely due to the island’s interesting history. Mauritian fried noodles or mines frites is another popular dish, and it’s as delicious as it is simple.
Mauritian Fried Noodles Recipe: Serves 4

- 500g egg noodles
- 2 eggs
- Pinch of salt
- Pepper
- 150g boneless chicken breasts
- A small carrot, sliced into julienne strips
- 100g snow peas
- 100g bean sprouts
- 3-4 shiitake mushrooms, sliced into julienne strips
- Soy sauce (to taste)
- Oyster sauce (to taste)
- Garlic, chopped

Step 1: Cook the noodles in boiling water for a few minutes until cooked, but still firm. Drain.
Step 2: Slice chicken into strips,marinade in a bowl with some soy sauce and oyster sauce.
Step 3: Gently mix the eggs in a bowl to create an omelette batter. Add some salt and pepper. Combine.
Step 4: Heat some oil in a pan and cook the omelette.
Step 5: Cut the omelette into slices and put aside.
Step 6: Stir fry the garlic for a few minutes, add the chicken pieces and cook until they are almost done.
Step 7: Add the carrots and mushrooms to the chicken.
Step 8: Add the cooked noodles, and flavour with soy sauce and pepper.
Step 9: Toss the noodles to coat them in the sauces, then add the bean sprouts and combine.
Step 10: Remove the pan from the heat and serve with slices of omelette and chilli sauce.
