It’s headed up by an Italian chef

There’s nothing that screams ‘authentic’ like an esteemed Italian chef heading up an Italian restaurant and recreating his dearest nonna’s recipes to delight and surprise guests with every dish - and Bottega’s head chef, Roberto D’Adduzzio, aims to do just that. He believes that one of the things that makes Bottega so special (and so loved by guests) is the fact that they maintain the integrity of Italian food by keeping it simple and focusing on old-school Italian cooking techniques and beautiful flavours created by the finest ingredients. 

At Bottega, you can be sure that the food centres on authentic Italian cuisine, without any unnecessary twists. 

The pasta is unparalleled

For pasta-lovers looking to get their full of beautifully created pastas, you will be happy to know that the pasta dishes are some of the best on offer at Bottega. For those who can’t resist a fish pasta (a must during a holiday by the sea), then the linguine allo scoglio (mixed seafood), con aglio (garlic), olio (olive oil), peperoncino (chilli) e pomodoro fresco (fresh tomato sauce) is unmissable also because it’s Bottega’s star dish. 

Another popular pasta dish is the orecchiette (a type of pasta) con broccoli, zucca, patate (potatoes), acciuga (anchovies) e pesto alla rucola (rocket pesto). Other than these two dishes already mentioned, all of the pastas at Bottega are lovingly homemade. And the best news for those who can’t handle gluten is that gluten-free pasta is available upon request! 

There’s a risotto dish that is hugely popular with guests

There’s something wonderfully indulgent about a flavourful risotto that has been cooked to perfection, especially when it’s served in the gorgeous surrounds of Kanuhura. One of the popular menu items at Bottega is the risotto con pomodori secchi (sun-dried tomatoes), spinaci freschi (fresh spinach) e Formaggio Montasio. Beautifully cooked and packed with layers of flavours, it’s definitely a must-try at Bottega.

In Italy, gorgeous pasta and risotto dishes are often served as starters, so try or share one of the above dishes but make sure you leave room for mains. Being by the sea, Bottega naturally offers guests some exquisite fish dishes, two of the best being the polpo grigliato (grilled octopus) con patate arrosto (roast potatoes), verdure di stagione all’olio piccante (seasonal vegetables in a spicy oil) and merluzzo bianco brigliato (grilled white cod) in zuppa di pesce (in a fish soup) e pancetta croccante (with crispy pancetta). 

If you prefer a meat-centric main, then we recommend ordering the carré d’agnello alla brace (grilled lamb rack), spinaci saltati (sauteed spinach) e patata gallette (and sweet potato) which is by far one of the best and most popular meat dishes on the menu.

The pizzas are nothing short of superb

One of Bottega’s greatest features is its incredible open pizza oven, which ensures that the pizzas all have incredible depth of flavour. The open pizza oven is a common way of cooking in Italy, and this is one of the ways Chef Roberto keeps it authentic at Bottega. The three most loved pizzas at Bottega are the margherita, the pizza Italia and the classic four seasons pizza - and you really can’t go wrong with any of these. The pizza dough at Bottega is freshly made on-site and by hand using the best imported flour from Italy - Bottega’s mouth-watering creations are traditional pizzas at their finest. 

Along with an extensive list of savoury pizzas, there are a few small sweet pizzas on offer (which include toppings such as Nutella, apples, mascarpone and maple syrup), created specifically for kids. 

Dessert is worth saving room for
 
Of course, a meal at Bottega wouldn’t be complete without some satisfying dolce to top it off, and those on the Bottega menu are absolute moreish. Try the famous tiramisù di Bottega, the panna cotta con mousse di cocco (chocolate mousse) e sorbetto di ananas (and pineapple sorbet) and La Millefoglie di crema chantilly con un ragout di fragole (a Millefoglie with chantilly cream and strawberry sauce). The coconut sorbet is also enormously popular among guests because not only is it delicious and refreshing, it’s made by our in-house pastry chef Ida Pustaka! 

There are some spectacular cooking classes for children

Kanuhura’s little guests are spoilt with a delectable complimentary cooking class every Friday between 11-12, where they are taught (while wearing adorable little chef’s uniforms and hats) to make their own pizzas. They need to register their interest at the Kanuhura Kids Club and then they will get to embrace the pizza-making process - with assistance from the chefs - from rolling the dough and putting on the sauce to adding all of their favourite toppings and baking it in the oven, after which they will get to enjoy their marvellous creations. 

On Mondays between 11-12, kids can also learn the fine art of making tortellini and ravioli. Once again, registration at the Kids Club is required and they will don cute little chef’s outfits. They will then be taught how to fill these special pasta parcels, cook them and eat them wonderfully warm and fresh. 

Bottega has its own wine cellar

One of the best aspects of this phenomenal Italian restaurant (apart from its mouthwatering food, of course) is its incredible array of wine housed in its very own wine cellar - a highlight for discerning gourmets. While there are a number of wines on offer, choosing an Italian variety when dining at Bottega is always a good choice. For those who would like a little expert input, the restaurant’s Head Sommelier is always on hand to assist you. To get an idea of what he might suggest, he has named the Bramito del Cervo, Castello Della Sala 2016, Umbria, the Chianti Classico Riserva, Marchese Antinori 2014, Tuscany and the Tignanello 2015, Tuscany as excellent choices to pair with many of the dishes at Bottega.

For something truly special to pair with your meal, however, the Bottega Sommelier suggests the Mormoreto, Marchesi Di Frescobaldi, Castello Di Nipozzano, Tuscany 2016, especially if the origin of the dish is Tuscan as well. Italian cuisine is very regional so it makes sense if you pair your wine accordingly too. This incredible wine comes from a stunning farm has an excellent vintage and considering its zesty, fruity flavours and smooth finish, it’s a truly magnificent option. 

Ultimately, you can’t go wrong with a meal spent at Bottega (where you can also choose to sit in the air-conditioned room or cellar or outside with a stunning view), where great care has been taken to ensure guests have a phenomenal culinary experience.
